Our Garlic is sustainably grown, meaning, we use only natural soil amended with wood chips, pig, cow and chicken maure.

Our garlic is watered with only natural high Montana mountain run off. Sitting 1/2 way up the large Ksanka mountain range, our farm has no houses or farms above our field, only vast amounts of forest so no water contamination. This is something most people forget to think about when buying garlic. All the big companies that grow garlic are all watered with city or drainage water, which contains, who know what. Rest assured our garlic is completely chemical free. We use Bat Guano, and manure tea to fertilize. WE dont use ANY STORE BOUGHT "organic or Natural" fertilizers, because we don't believe in anything synthetic even if they do call it organic.

Spanish Roja garlic is defined almost entirely by its flavor. Its appearance is similar to many other harndeck garlics, boasting eight to twelve cloves which are arranged around a central, woody stalk. Its tan to violet-blushed sheath of wrappers encapsulates large ivory cloves with a flavor so strong, hot and robust that it sticks around for a long time. If cooked, particularly roasted it will develop a deep, rich and complex flavor. It has been described as one of the most preferred garlics flavor wise in the world. 

Spanish Roja garlic, also known as Greek or Greek Blue garlic is a hardneck cultivator botanically known as Allium sativum var. ophioscorodon. Spanish Roja is a rocambole type, which is the most common hardneck cultivator. Spanish Roja garlic is considered to be one of the most relevant and revered of all hardneck garlics. It is sought after for its superior flavor and in 2002 consistently ranked in the top two or three in a series of fifty tastings conducted across the United States by garlic expert, Chester Aaron. 

Most bulbs are smaller than other garlics, but the flavor outways the bulb size.
Roja usually has 12 to 16 cloves, but
Cranky Carls has spent years getting the bulb and clove sizes up.
Our Roja is generally 1.5 to 2.5 inches, and only 6 yo 8 clovers,
bigger and easier to work with.

Spanish Roja (rocombole hardneck variety) This garlic has taken off and has started producing some good sized bulbs for us. Spanish Roja is the best known and best loved hardneck garlic in America today. The large, flat bottomed, and brilliant dark purple streaked bulbs often reach three inches in diameter and typically have eight to twelve large cloves. It peels easily and stores up to 4-6 months. It is generally a vigorous grower with large foliage that is dark green and results in a pretty good sized bulb. Being a Rocambole garlic, its flavor is very strong, hot and spicy and sticks around for a long time. It has the deep, rich, complex flavor of gourmet garlic at its very finest. It has been described as the most piquant garlic in the world. It’s flavor is good and is best described as being a “true” garlic flavor. Averages about 8 cloves per bulb.

Garlic scapes, if you have hitherto not made their acquaintance, are the curly, green shoots that emerge in summer from autumn-planted, “hard-neck” garlic bulbs. Growers usually remove these shoots in order to encourage further development of the bulb below. The scapes have a distinct garlic flavor that is potent, but without the stinging bite of a raw clove. Fresh Scapes are available June and July of each season, Freeze it or use it on arrival

German White Garlic is one of the most widely grown garlic. The flavor is a full body taste with a little zing when eaten raw, but produces a very flavorful gentle taste when cooked. Our German White is unique in that most bulbs have only 4 or VERY arge cloves vs. grocery store Garlic that hast over 15 small, difficult to peel and use. Our garlic cloves are so equisite you'll want to slice them and show them off in your meals.

A Garlic Scape is the cute curly Q stem, that comes out of the garlic plant usually 30 days prior to Harvest. It is a tender shoot that produces Garlic Seed. The Garlic Scape is a delicasy as it is only availble fresh 1 to 2 months out of the year. The top portion of the scape can be cute and fried in butter, with veggies or alone. The flavor is quite unique as it give the full flavor of garlic with out the kick!
